Zupas Wisconsin Cauliflower Soup

Earlier this week I was majorly craving Zupas Wisconsin Cauliflower Soup. Have you ever had it?! It's something you dream about...trust me! Anyway, I looked up a recipe for it and found one! It was really, really delicious, although the taste wasn't exactly the same as the restaurant it will still definitely be repeated in my kitchen in the near future. Here it is! Try it! You'll like it!

Wisconsin Cauliflower Soup
Yields: 9 cups or 8 first-course servings (or 4-5 hungry adults :)

2 tablespoons margarine or butter (1/4 stick)
1 medium onion, chopped
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups milk
1 can (13 3/4 to 14 1/2 ounces) chicken broth
1 head (2 1/2 pounds) cauliflower, cut into 1-inch pieces
1 teaspoon Dijon mustard
1 cup shredded cheddar cheese
1 cup pepper jack cheese

In 4-quart saucepan, melt margarine or butter over medium heat. Add onion and cook until golden, about 10 minutes, stirring occasionally. Stir in flour and salt; cook 2minutes, stirring frequently. Gradually stir in milk, chicken broth, and 1 1/2 cups water; add cauliflower and heat to boiling over high heat. Reduce heat to low; cover and simmer until cauliflower is tender, about 10 minutes. In blender (with center part of blender cover removed to allow steam to escape), blend cauliflower mixture at low speed in small batches until very smooth. Return cauliflower mixture to saucepan; heat over medium heat until hot, stirring occasionally. Remove saucepan from heat; stir in mustard and 1 1/2 cups cheese until melted and smooth. Garnish soup with remaining cheese to serve.

This soup recipe is how I found your blog and I have been following your blog ever since! I am going to make this soup again tonight, but I am going to leave out the Dijon Mustard. I hate Dijon Mustard..and I felt like it took over the flavor of the soup. So I would say if you like Dijon, add it..but if not so much leave it out! Thanks for all the recipes!

Delish! I followed the recipe but added salt and pepper & loved it, it was sooo good! Next time I might add half & half or cream instead of milk to make it a little thicker. But otherwise I wouldn't change a thing!! Thanks for sharing :)

I made this soup tonight and enjoyed it. I will change the amounts of cheese next time to 2 cups of cheddar and 1/2 cup pepper jack. I will also cut the mustard out completely. It doesn't taste like Zupas, but its a good soup on its own. My search for the authentic Wisconsin Cauliflower Soup continues...

Great texture! I think I will use a sharp white cheddar next time I make this.... I did serve it with bacon crumbles on top and it was so good!

would definitely make it again!
I would try sharp white in place of regular cheddar) just to make it pretty. It wasn't as salty as I remember Zupas being, but that's a good thing!
