pojo's pick me up salsa
{variation on the cowboy cavier delight}

1 can low sodium black beans
1 - 2 can[s] low sodium shoepeg corn
1 can sliced black olives
5 - 6 roma tomatoes, diced
2 peaches {optional, but delish}
1 purple onion, chopped or diced
1 - 2 avocados, diced {if avocados are large, one is fine}
kosher salt
pepper {just a little}
fat free italian dressing {swirl around in bowl a few times}
fresh lime juice
Place all ingredients in a bowl {everything up to the kosher salt}. Sprinkle kosher salt, a little pepper, italian dressing, lime juice on top. Stir. Enjoy.
