this recipe has quickly become a family favorite in our house. it is super easy and delicious.
ingredients:
2-3 pounds pork
3 cans coke {not diet}
1/4 cup brown sugar
dash of garlic salt
1/4 cup water
1 can sliced green chilies
3/4 can enchilada sauce
1 cup brown sugar
directions:
put the pork in a heavy duty ziploc bag to marinade. add about a can and a half of coke and about 1/4 cup brown sugar. marinade for a few hours or overnight.
drain marinade and put pork, 1/2 can coke, water, and garlic salt in crock pot on high for 3-4 hours {or until it shreds easily, but don't let it get too dry}. remove pork from crock pot and drain any liquid left in the pot. shred pork.
in a food processor or blender, blend 1/2 can coke, chilies, enchilada sauce and remaining brown sugar {about a cup, you can add a little more or less to taste}. if it looks too thick, add more coke little by little.
put the shredded pork and sauce in crock pot and cook on low for 2 hours.
these tacos are really good drizzled in a cilantro ranch dressing.

1/3 cup sour cream
1 teaspoon minced garlic

These sound amazing! I added them to my menu plan for this week. I mentioned you (with a link) on my blog. www.naptimeblitz.wordpress.com. Check it out, hope that is ok!
Is this an actual pic of the tacos you make? If so what is your rice recipe?
Oh yum! All of your recipes look delicious, but this one puts me over the edge. Thank you! Thank you! and Thank you!
mallory, i actually didn't make the rice. i bought it from Fresh Market in slc, ut - they carry a brand called RICO that makes pretty fabulous mexican rice, guacamole, pico de gallo, refried beans, etc. so i'f you're in the area you should pick some up!
Loved the recipe. Thanks! http://imnotquitemartha.blogspot.com/2011/07/foodfoodfood.html
Okay question--did you fry the tortilla or why is that fried goodness? And if yes, what type of oil did you use? Excited to try this recipe---thanks for posting!
I've made this recipe a few times and it is the bomb. I'm posting it (and linking) on my blog to spread the love.
These look sooo good! What kind of tortilla did you use?
sorry to answer your questions so late - i used the uncooked flour tortillas from costo and fried them in vegetable oil.
