anyone who knows me knows that i take my desserts seriously. and this, my friends, is a seriously delicios dessert. so stop by your local farmer's market for some fresh fruit & whip up this bad boy for a serious treat!
Ingredients:
1 pie crust
1/3 cup butter
6-8 peaches, pitted and quartered
1/4 cup peach or apricot nectar (i've used homemade apricot jam and it worked great)
2 tablespoon packed brown sugar
1 cup fresh raspberries or blue berries (or both!)
vanilla ice cream
Directions
1) Preheat oven to 375. Let pie crust stand at room temp for 15 mins. Line baking sheet with nonstick foil or parchment paper. Unroll crust onto lightly floured surface. Bruch with 1 Tbsp. melted butter. Sprinkle with 1 Tbsp. granulated sugar and 1/4 tsp. cinnamon. Cut pastry into strips (or any other desired shape). Place on baking sheet. Bake 10-12 mins or until lightly browned.
2) Melt butter in 12 inch skillet over medium heat. Add peaches, skin side up, turning once, cook 4-5 mins. Remove peaches to bowls. Add nectar and brown sugar to skillet. Cook and stir over medium heat 1-2 mins or until sugar is dissolved and syrup forms.
3) Spoon syrup on peaches. TOp with berries and pie crust strips. Serve with ice cream.
